【JD、JA100点満点・VINOUS99点】サン・テミリオンのトップの座に君臨しつづけるシャトー・シュヴァル・ブラン! シュヴァル・ブランは、サン・テミリオンの中で2022年に更新されるまでたった4つのシャトーにのみ許された最高の栄冠、「サン・テミリオン・プリミエ・グラン・クリュ・クラッセA」（第一特別級A）を獲得していた別格扱いのシャトー。ラグジュアリーグループのLVMHとフレール家が所有し、若き才能ある醸造責任者のピエール・オリヴィエ・クルーエを招集し、その勢いはとどまらない。 「シャトー・シュヴァル・ブラン」は、所有する39haのブドウ畑は45区画に細分化されており、砂利や粘土を均等に含む土壌で構成されています。カベルネ・フランとメルロを主体に、カベルネ・ソーヴィニヨンも少量栽培しています。 ブドウを収穫・選果した後、除梗と破砕を行います。果汁を発酵した後、28～30℃で2～3日間醸すことで、果汁をリッチかつエレガントに、タンニンを和らげシルキーなスタイルへと仕上げます。果汁を圧搾後、約20℃でマロラクティック発酵をすることで、酸味を和らげ、ワインを安定化させます。その後トロンセ産のフレンチオークを用いて、15～18ヵ月間熟成を行います。 シャトー・シュヴァル・ブランの真骨頂とも言える、カベルネ・フランを多く使用したことによって現れるコクと力強い味わいです。「ボルドーワインに構造があるのは普通です。シュヴァル・ブランは、構造のワインではなく、香りのワインであり、品位、フレッシュさ、フルーティーさ、飲みやすさのワインです」(『ワイナート37号』より)と醸造責任者のオリヴィエ・ベルエ氏は言います。この偉大なワインは若い頃から楽しむこともでき、さらにそこから20～30年は熟成するといわれます。良いワインは飲み頃が長く続くといいますが、このシャトーこそ典型。 CHATEAU CHEVAL BLANC シャトー・シュヴァル・ブラン 生産地：フランス ボルドー サン・テミリオン 原産地呼称：AOC. It has a deep purple-black color and a pH of 3.7. The nose is very closed and tight to begin, needing a lot of swirling to coax out notes of plum preserves, black cherry compote, and blueberry pie, followed by suggestions of pencil shavings, clove oil, candied violets, cast-iron pan, and fertile loam, with a waft of wild sage.
